Baluk Plakki

3 pounds cleaned, firm fleshed fish
1/2 cup oil
salt to taste
3 medium sliced onions
6 medium tomatoes (or 1 /12 cup strained canned stewed tomatoes)
1 cup boiling water
parsley and/or fresh mint

Prepare the fish as for broiling.

With oil and salt, rub the fish down lightly.

Broil under low heat, starting with browning the inner side then the other.

Place fish in baking dish, and smother with sliced onions and tomatoes.

Sprinkle lightly with salt and bake 20 minutes at 400F.

Add 1 cup boiling water.

Bake 5 to 10 minutes longer.

Serve either hot or cold, garnishing with parsley or mint. Lemon wedges may also be served.
