Roast Brisket

5 lb Brisket (trimmed)
2 tablespoons of chicken fat or butter
1 tablespoon of paprika
2 teaspoons of salt
1/2 teaspoon of pepper
1 teaspoon of accent (optional)
1 teaspoon of garlic salt or garlic powder

Combine the seasonings with fat and spread across both sides of brisket
Place in shallow baking pan
Roast uncovered at 325 degrees until browned (approximately 1.5 hours)
Turn after 45 minutes
Add half cup of hot water to liquid in pan and pour over brisket and cover with either foil or place into a covered roaster and place back in oven and continue roasting until tender, approximately 2 hours.

This may be sliced just before tender and placed back into gravy. Continue to roast until done.
