Mix filling ingredients until smooth, then set aside.
Mix eggs and milk. Add flour, salt, and margarine while beating until smooth with electric mixer.
Coat bottom of 8-inch frying pan with margarine and pour in two Tbsp. batter. Tilt pan to spread evenly.
Cook over medium heat until just set on top and light gold on bottom.
Place bottom side up on cloth or waxed paper, allow to cool slightly,
Put one or two Tbsp. filling in center, and roll up.
Fry in margarine until golden brown.
If blintzes are not to be served immediately, grease bottoms of baking pans with margarine, put a single layer of blintzes in each, cool, cover tightly, and refrigerate overnight.
To serve, reheat from room temperature in 325 degree oven.
Top with sour cream, or apple sauce, and powdered sugar, berries, or honey. (Any crepe recipe can be substituted for the batter.)
